Hand-harvested, terroir by terroir, at optimum ripeness on 3 plots: Grandes Vignes, Le Sabot, Les Bessards, vines aged between 20 and 90 years. 100% destemmed. Fermentation and maceration of the parcels separately, in temperature-controlled stainless steel vats for around 3 weeks, with pumping over and punching of the cap during the first part of fermentation. Aged for 12 months in barrels, then 6 months in stainless steel vats. |
