The estate and the wine
The estate and the wine Michel Chapoutier continues his everlasting quest for excellence in the Roussillon, at the Domaine de Bila-Haut. A pioneer of biodynamic farming, he applies the same principles to these southern terroirs as those that have made him one of the world's most renowned winemakers. With all the talent we know him for, he masterfully blends Mediterranean grape varieties to produce exceptional wines, brimming with delight.
Wine Blended from grenache blanc and vermentino, the 2019 white Côtes du Roussillon Occultum Lapidem combines fine flinty notes from the shale with a very pure floral touch. It is a fresh, concentrated ensemble, with a structure that unfolds with delicacy and persistence, perfectly ripe. This white wine will be perfectly suited for an aperitif with tapas or at the table with grilled fish.
Vinification Hand-harvested, 70% alcoholic fermentation in stainless steel vats and 30% in demi-muids, then aged for 9 months in the same configuration.

Certified organic wine.
