Harvested by hand. 1.5 ha, south, southeast exposure, in the locality of Les Pargues, vines averaging 64-74 years old. Pneumatic pressing, cold settling and fermentation at around 20°C. Indigenous yeasts. Vinified and aged for 18 months in temperature-controlled stainless-steel vats.
Certified organic wine. AB Ecocert certification since vintage 2013. |
