From old vines, some over 60 years old, and partially aged in barrels with little to no new oak, the 2022 white Chablis 1er Cru Vaillon is a textbook example of its kind. Hand harvested. Pneumatic pressing, cold settling and temperature-controlled fermentation. Vinification and ageing for 55% of the harvest in temperature-controlled stainless-steel vats, and for the remaining 45% in barrels (of which 5% are new, and the rest from 2, 3 and 4 wines) for 8 months, then blending for 2 to 4 months in vats before bottling.
