The estate and the wine |
|
|
This is a rare estate, one few have the privilege to access. Philippe Pacalet is a deeply sensitive winemaker who captures the essence of Burgundy with remarkable precision and elegance, using the most natural methods possible—whole-cluster fermentation, no added sulfur, and extended aging.
Following in the footsteps of his mentors Marcel Lapierre and Jules Chauvet, he crafts wines under organic practices, balancing technical mastery with pure aesthetics. Each bottle is a true reflection of the great Burgundian terroirs he has explored for more than twenty years.
Awarded 2 stars by the French wine guide RVF, his exquisite wines—renowned for their silky texture and incomparable precision—are among the most sought-after in their appellations. |

The Échezeaux Grand Cru 2021, rooted in sandy, ferruginous limestone soils worked by horse, reveals an impressive structural intensity. This wine’s generous, bold character is matched by dense, firm tannins, creating a profile that is both powerful and refined, with vibrant energy. Aromas of blackberry, raspberry, and floral notes weave seamlessly into a deeply concentrated, structured palate, brimming with depth and precision. A truly exceptional wine destined for extended aging—perfect for those willing to let it rest in the cellar. |
