Wine Exhibiting a lovely maturity but with less power than usual, the 2021 Red Palette offers a delightful and immediate drinking experience. Vinification Manual harvest. Vines over 50 years old. Light crushing with destemming, fermentation in small vats with pump-overs, and a 21-day maceration period. Pressing of the grape skins is done using a vertical hydraulic press. Aged for 24 months in small casks, followed by 12 months in oak barrels of varying ages. The wine is blended at bottling, with no filtration.
