Vinification:
Sandstone terroir, south/south-east facing, lower slopes. 30hl/ha, 100% de-stemmed, hand-picked harvest. 48-72 hours of cold pre-fermentation maceration. Fermentation in stainless steel vats with indigenous yeasts. Pneumatic pressing. Extended ageing in concrete vats on fine lees for 14 months, then 10 months in stainless steel vats. No fining, light plate filtration.Biodynamic certified wine.

Ageing takes place primarily in concrete eggs, with minimal use of oak.
