The 2024 White IGP Pays d'Oc Carole is a fresh, ocean-influenced Chardonnay, aged on fine lees with no oak. It opens with a clean, crisp nose of white flowers, mint, and candied lemon, with a subtle toasty note. This is a white wine with sharp focus and a mineral edge—precise, mouthwatering, and zesty on the palate. Very much a Chablis-style apéritif wine, it’s spot-on with seafood or sushi. And in magnum? It’s made for sharing.Vinification:
Night harvesting, pneumatic pressing, cold settling, fermentation in stainless steel vats (18°C) and malolactic fermentation for 25%, aged for two months on fine lees in stainless steel vats.For environmental reasons, this wine is sold without a capsule.
