Wine:

Originating from a high-altitude terroir of sandstone and schist, nurtured by its old vines, the 2022 white Languedoc combines white grenache and carignan with clairette and a touch of roussanne. Vinified in large wooden vats and concrete tanks, it delivers a juicy and fresh fruitiness that is both rich and balanced, featuring notes of white flowers, ripe fruits, and citrus. An aniseed hint and a finish that leans on bitter notes enhance the tonic vibe of this plump and vigorous white, making it absolutely perfect.

Vinification:

Hand-picked, sorted in the vineyard and cellar. Pneumatic pressing and temperature control. Aged in demi-muid and concrete eggs.

Bright pale yellow.

Nose:

Very pure and intensely floral, with white fruit aromas underpinned by a fine oaky finish.

Palate:

A beautiful tension is revealed from the outset on the palate, with a striking freshness and delicate honeyed flavors marked by a lovely minerality.

Temperature:

Serve between 10 and 12°C.

Food and wine pairing:

Aperitifs, grilled fish, verrines of asparagus mayonnaise with garden herbs, white meats, cheeses, Pélardon.

His high-altitude vineyards in the Saint-Privat area, resting on schist and sandstone, yield exceptional grapes; the resulting wines are a stunning display of strength and elegance.
