Wine:

Made from 100% Petit Manseng, the 2020 Les Jardins de Babylone Sweet White (Vin de France) strikes a flawless balance between sweetness, freshness, and alcohol. It’s a monument to pure indulgence—refined, precise, and bursting with aromatic clarity. Already delicious with something like Roquefort (you’ll thank us later), but built to go the distance—easily ten years or more, depending on how you like your wines. Rated 95/100 by the French wine guide RVF. A dessert wine with brains, beauty, and serious aging potential.

Vinification:

Hand harvested. Slow pneumatic pressing, fermentation and aging in wood for 12 months in cigar-shaped oak barrels, mass period of 6 to 8 months before bottling, then aged in the bottle for an average of 2 years before release. Residual sugar: 122.09 g/L (Sweet Wine).

Temperature:

Serve between 10 and 12°C in a large glass.

Food and wine pairing:

Foie gras terrine, pan-fried foie gras, roast guinea fowl, fish in cream sauce, white meat in cream sauce, all truffle dishes, sheep's cheese from the Pyrenees and Basque Country, Roquefort, fresh exotic fruit tart (pineapple, mango), lemon meringue pie, citrus fruit cake, vanilla crème brûlée, passion fruit charlotte.

Almost impossible to get your hands on—unless your name’s on the wine list of a three-star restaurant—these wines are usually gone before they even appear.
